Cantonese Herbal Pork Bone Soup

Cooking Time: 4 hours

Yields: 4 servings


  • 1 lb meaty pork bones, preferably pork side ribs cut crosswise
  • 4 slices fresh ginger, cut ⅛-inch thick
  • 150g prepackaged herbal soup mix
  • 2 ½ quarts cold water
  • 1 tablespoon salt
  • Soy sauce (for dipping)


  1. Soak the pork bones in cold water for an hour. Rinse thoroughly and drain. The soaking process helps to get rid of any impurities or blood, to keep the soup clear.
  2. Put the pork bones in a large pot, and add the ginger, herbal soup mix, and 2 ½ quarts of cold water. Bring everything to a boil, and then immediately turn the heat down to simmer. Let the soup simmer for 3 to 4 hours.
  3. Add the salt, and serve hot, along with some soy sauce on the table for dipping your pork into.
